Indigenous Heritage & Pure Gir Cow Ledger

The Fire, The Wood, The Pot

Mathana was born out of a simple conviction: to revive the authentic, hand-churned Vedic Bilona Ghee of our pastoral ancestors, untouched by industrial separators or chemical refining.

शुद्धता की हर स्टेप पर हमारा वादा

Our 6-Step Traditional Vedic Bilona Method

We reject centrifugal industrial shortcuts. True bilona ghee requires 30x more time, whole-milk curd fermentation, and earthen woodfire clarification.

01

Step 1: Pure Gir Cow Milk (शुद्ध गिर गाय का दूध)

Fresh, nutrient-rich whole milk is collected directly from pasture-grazed pure Gir cow herds across rural Gujarat and Haryana pastoral belts.

02

Step 2: Slow Woodfire Boiling (दूध को उबाला जाता है)

The raw milk is slowly boiled over gentle firewood and cow-dung cake flames (hara) to thicken and caramelize the natural sugars.

03

Step 3: Natural Curd Setting (दही जमाया जाता है)

Warm milk is naturally cooled and inoculated with indigenous starter cultures in clay pots (matkas) to ferment into whole-milk probiotic curd.

04

Step 4: Wooden Bilona Churning (बिलोना किया जाता है)

At dawn, the curd is churned bidirectionally with a traditional wooden churner (mathani/ravaiya) to separate the aromatic butter (makkhan).

05

Step 5: Butter Extraction (मक्खन को निकाला जाता है)

Fresh golden makkhan is gently separated from the buttermilk (chaas) and washed in pure well water to remove residual acidic whey.

06

Step 6: Clarification to Golden Ghee (घी तैयार किया जाता है)

The butter is clarified on low heat in heavy-bottomed brass Kansa vessels at 83°C–85°C, yielding signature sandy granules and a nutty aroma.

Why Rural Gujarat & Haryana Pastoral Belts?

The pristine rural pastoral belts of Gujarat and Haryana are celebrated for harboring India's revered indigenous Gir cows. Grazing freely under natural sunlight on fertile open pastures, these native cattle produce nutrient-dense whole milk rich in A2 beta-casein and natural golden carotene.

Historically, pastoral households maintained earthen furnaces (hara) and large wooden churners (bilona/ravaiya) to create pure ghee for family wellness. As industrial dairy aggregators entered with centrifugal cream separators, genuine bilona traditions were rapidly replaced with factory fat blends.

Mathana was established to preserve this sacred heritage. We partner directly with traditional pastoral families across rural Gujarat and Haryana grazing belts, paying ethical rates and hand-churning the ghee in small, unadulterated batches using wooden bilonas.
